Cookie Wednesday!

Good Morning friends!  It is Cookie Wednesday at the Webster Insurance Agency.  Today we have Mexican Wedding Cookies for Cinco de Mayo!  (we are a little early:) )

Want to make them for your next Cinco de Mayo party? 

Here is our recipe:

1 C unsalted butter, at room temperature

1/2 c confectioners sugar, plus more for coating baked cookies

1 tsp vanilla extract

1 3/4 C all purpose flower, plus a little more for dusting hands

1 C pecans, chopped into small pieces

Directions:

Preheat the oven to 275 degrees.  Line cookie sheets with parchment paper.

Using an electric mixer, cream butter and sugar at low speed until smooth.  Beat in vanilla.  At low speed, gradually add flour.  Mix in pecans with a spatuala.  With floured hands, take out 1 tablespoon of dough and shape into a crescent.  Continue to dust hands with flour as you make more cookies.  Place onto prepared cookie sheets.  Bake 40 minutes.  When cool enough to handle, but still warm, roll in additional confectioners sugar.  Cool on wire racks.

 

Cookie Wednesday- Pumpkin Chip

Good Morning!  It is a wonderful Cookie Wednesday here at Webster Insurance.  The Fall like weather we have had this week has inspired Sue and Eileen to bake Pumpkin Chip cookies for our visitors.

Can’t make it in?  Here is our recipe for these wonderful cake-like cookies.

1 1/2 C butter, softened

1 C sugar

2 C brown sugar packed

1 can (15 oz) solid pack pumpkin

1 egg

1 tsp vanilla extract

4 C flour

2 C quick cooling oats

2 tsp baking soda

2 tsp cinnamon

2 C (12 oz) chocolate chips

 

Directions:

In a large mixing bowl, cream butter and sugars.  Beat in the pumpkin, eggs and vanilla. Combine the flour, oats, baking soda, cinnamon, and salt.  Gradually add to the creamed mixture.  Stir in the chocolate chips.

Drop by tablespoonfuls 2 in apart onto ungreased baking sheet.  Bake at 350 degrees for 10-12 minutes.

Makes 10 dozen.

 

Cookie Wednesday!!

It is cookie Wednesday again at Webster Insurance!  Today our cookie is White Chocolate Chip with Walnuts.

 

Here is our recipie:

  • 1 cup butter, softened
  • 2 cups white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 2/3 cups white chocolate chips
  • 1 cup walnuts
 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, baking soda and salt; stir into the creamed mixture. Fold in the white chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, until cookies are set. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely

Cookie Wednesday!

It’s another cookie Wednesday here at Webster Insurance Agency!

 

Today we have Peanut Butter Maple Cookies.

These are a crispy, yet chewy cookie.  So good.  Here is our recipie-

1 C butter softened

1/2 c peanut butter

1 c sugar

1 c packed brown sugar

2 eggs

1 tbsp maple syrup

2 tsp vanilla extract

2 c flour

3/4 quick cooking oats

1-1/2 tsp baking powder

1 tsp baking soda

1 tsp salt

1 pkg (10 0z) peanut butter chips

 

In a mixing bowl, cream the butter, peanut butter and sugars.  Add the eggs, one at a time, beating well after each addition.  Beat in syrup and vanilla.  Combine flour, oats, baking powder, baking soda and salt;   add to the creamed mixture and mix well.  Stir in peanut butter chips.

Drop by heaping tablespoonfuls 2 in apart onto ungreased baking sheets.  Bake at 325 degrees fpr 15-18 min or until golden brown.  Cool for 1 minute before removing to wire racks.

makes about 5 dozen cookies

****NOTE: reduced fat or generic brands of peanut butter are not recommended.

Cookie Wednesday!

It’s another cookie Wednesday at Webster Insurance Agency!  Today we are featuring Lemon Pudding Cookies.  They are delicious.  We welcome everyone to come and try one (or two!)

Can’t make it to the office today? Why not try to recreate our cookies for your Easter dinner?

We used this recipie:

 

Ingredients

  • 1 cup butter, softened
  • 1 cup canola oil
  • 1 cup sugar
  • 1 cup confectioners’ sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 package (3.4 ounces) instant lemon pudding mix or instant pudding mix of your choice
  • 4 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda

Directions

  • In a large bowl, cream the butter, oil and sugars until light and fluffy. Beat in eggs, vanilla and dry pudding mix. Combine the flour, cream of tartar and baking soda; gradually add to creamed mixture and mix well.
  • Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten with a glass dipped in sugar.
  • Bake at 350° for 12-15 minutes or until lightly browned. Remove to wire racks. Yield: 7 dozen.
